Christine’s Vermont Oven Pancake

 

Preheat oven to 400 degrees F.

 

Mix together:

½ cup unbleached white flour

¼ teaspoon salt

1 teaspoon sugar

½ teaspoon cinnamon

3 eggs

½ cup milk

½ teaspoon vanilla

 

 

 

Put 3 tablespoons of butter (or a butter/margarine blend) into a 10” cast iron skillet, and place into pre-heated oven.  When melted add batter  and bake until popover pancake has risen and has brown highlights.  This will take 15-20 minutes.

It will look spectacular as it comes out of the oven! But will quickly deflate.  We cut into quarters and serve with Vermont Maple Syrup.  Serves 2-4.

 

* Variation:  sauté chopped apples, peaches, plums or other fresh fruit in the melted butter for a few minutes before adding batter.  It won’t be as puffy, but it tastes great
